What a crown should be
The crown is the slab at the top that sheds rain away from the flue. What most older houses have is a thin mortar wash with no reinforcement, no expansion joint at the tile and no overhang, so it cracks around the tile and the water runs straight down the brick.
A proper crown is cast, reinforced, sloped away, with a bond break at the tile and a projection past the masonry with a drip edge underneath.
Flexible coatings suit a moving structure
Where the chimney is still moving with the soil, a rigid repair cracks again. A flexible crown coating bridges movement in a way mortar cannot, and on a Texas stack that is frequently the more durable answer.
Thermal movement is real here

Is the crown the same as the cap?
No. The crown is the masonry slab around the flue; the cap is the metal cover with mesh over the opening.
